Ernest Williams has been cooking Mama Faye’s barbecue recipe for his friends and family for years. Upon retirement from his career as a peace officer in Big Rock, Texas, Ernest and his wife Francine moved to Dallas. One afternoon he was discovered by Madison Partner’s Susan Reese who followed her nose to find Ernest cooking on a small smoker hitched to the back of his truck. After tasting the goods she encouraged him to open up a brick and mortar space in one of her buildings in Deep Ellum, where he has been cooking up some of the finest barbecue in Dallas ever since.
